Weekend in Pictures vol. 7

I was having a rough day so it was so refreshing to go to a happy hour with
 a beautiful view of the sunset followed by my friend's improv group performance. 

I desperately needed the socializing and laughing. 

Slept in (til 7:30, wooo!)

Had a fancy-schmancy breakfast date with Boyfriend-Fellow

Had an extra long workout (much needed)

Went to a conference for work and doodled this....

Went to my friend's housewarming party (which involved a trip to the beach)
Played Gubs at Starbucks with Boyfriend-Fellow over breakfast.

My crafting friend came over as has become common on Sunday but 
we didn't have the supplies for the crafts we wanted to do so we made bread.

There was downtime during the bread-making so I also 
made a batch of veggie burgers (recipe) and cauliflower crust pizza (recipe).

Then I spent the evening preparing for my presentation on Monday.

Cauliflower Crust Pizza

Guys!!! My A.P.E. (adult picky eater) friend called me last week to tell me he had just eaten the most delicious homemade pizza, but get this... the crust was made out of cauliflower!

I cannot emphasize to you enough how picky this guy is.  In fact, the reason he was even eating this weird pizza is because he has decided that he wants to start eating fruits and vegetables...  That's right... Start eating fruits and vegetables for the first time in his life.
I kid you not, he lived on cereal, bagels, meat, spaghetti.... and... not much else.

Fortuitously, Boyfriend-fellow and I already had a pizza night planned so we just switched up the bread dough we were going to use with this cauliflower creation.
Result: OH MY GOSH.  It's SUPER yum and so easy to make!

We used the recipe here as inspiration but we massively adapted it.

3 cups riced cauliflower (cooked)
1/4 cup shredded skim mozzarella cheese
1 egg
(*you can add herbs and spices if you want) 

1) Rice the cauliflower (with a food processor or, if you're like me and don't have one, just chop it up real fine).
2) Cook the cauliflower (3.5 minutes in the microwave per cup... No need to add water, it's already got enough in it).
3) Mix cauliflower, egg and cheese.
4) Spread mixture onto a pan.

5) Bake 15 minutes.

6) Add toppings and broil until cheese is melted.

(It looks like the bottom is burnt but it's just the edges and they were still yummy)

Now that I started researching cauliflower, it turns out it can be substituted for rice as well! Next up, cauliflower stir fry! Yum....

Awkward / Awesome Volume 45

Awkward and Awesome: I'm finally getting at least one of my wisdom teeth growing in.

Awkward: Sending my boyfriend a text meant for my dad.

Awesome: My officemate DJ-ing a blast-from-the-past themed afternoon (Mambo #5, Sugar Ray, Wallflowers, TLC, Weezer... glorious).

Awesome: Instead of eating lunch in front of my computer as per usual, Boyfriend-Fellow and I played Gubs outside.

Awkward AND Awesome: Two of my friends (who have never met before) wore the same shirt to my birthday lunch.

Awesome: Making a cauliflower-crust pizza (recipe coming soon) and watching Super 8 with Boyfriend-Fellow.  Perfect date.

Awesome: For my birthday, Brutharrr wrote me a tiny note and put it in a tiny capsule (I LOVE tiny things).
Awkward: I can't find it!

Awesome: Someone brought 28 day old kittens to work!!!

Vegetarian Sliders

As promised, here's the recipe that Boyfriend-Fellow's mom gave me for making Black Bean Burgers.

1 can black beans, rinsed and drained
1/2 bell pepper, diced
1/2 onion, diced
1 egg
1 tbsp. chili powder (*careful with this... they can be spicy*)
1 tsp cumin
1/2+ cup bread crumbs (I substituted oatmeal when I made this later)

Preheat the oven to 375
Mash black beans with fork until thick and pasty.
Stir diced pepper and onion into the beans.
Mix egg, chili powder and cumin in a separate bowl.
Stir egg mixture into bean mixture.
Mix in bread crumbs (or oatmeal!) until the mixture is sticky and holds together.
Divide and form into 4-6 patties.
Bake for 10 minutes on each side or grill for 8 minutes on each side.


To make sliders, I just made smaller patties and baked them for about a minute less.
 (this is how much doubling the recipe made)

For the buns, I used whole wheat dinner rolls cut in half 
and I added grilled onions plus a wedge of blue cheese....

Nor Cal Adventures

I was a bit sad to come back to California after spending time with Boyfriend-Fellow's family on the east coast (see this post).
It was so cool to get to learn so much about him and see all his history, not to mention that the town he grew up in is real neat, chock full of a sense of community.
To cheer me up, we decided to plan a trip up to my dad's house, which is close by to several areas I've lived in my life.
Here's the mini-trip diary...

It was the captain's 50th birthday so 
his wife brought everyone cookies!
Faja and Brutharrr had falafels waiting for us 
when we got there, cuz they're awesome people.
Steven came over and we watched Scott Pilgrim vs. The World
(one of my all time favorites)
Drove to Santa Cruz.
Had acai bowls from The Brazil Cafe  with a few friends
Coffee at Pergolesi's.
Wandered downtown.
Boyfriend-Fellow got some sweet wolf socks.
Went back to Perg's and played some games in the shade.
A few more friends came...

Settled on Roasted Barley ice cream at the Penny Ice Creamery 
(after many samples of course)
A few more friends came....

Then the whole group had lunch at The Saturn Cafe....

Boyfriend-Fellow and I headed up to the campus so
I could show him where I used to live and work.
Came home to join Faja for Thai food followed by massages.
Oooh la la!
Then us three played Bananagrams
Boyfriend-Fellow and I stayed up late playing Gubs

Decided last minute to do something exciting and drove to 
San Francisco to romp around the Ferry Building for a few hours.

East Coast Adventures

So, I went to the east coast and met Boyfriend-Fellow's family recently.
It was amazing.  He has all these great, but dichotomous aspects to his personality
(like being very open with his feelings without being emotional).
Meeting them really made it all make sense.
They're like his horcruxes.  Each of them embodying one of his great characteristics.
For example, his father is very laid back (just like Boyfriend-Fellow).
His mom is a strong leader (just like Boyfriend-Fellow).
His grandma has the BEST sense of humor (just like Boyfriend-Fellow).
and so on...
So I don't forget, here's my mini trip diary...

Change planes.
Met Boyfriend-Fellow's dad and step-mom.
LOOOoooovVE them.

Lunch with Boyfriend-Fellow's mom.
That was the first time I met her. (Heart.)
Walked around downtown.  
Ran into lawyer dude trying to find a place that sold tape measurers
("I'm working on a case. Distance just became relevant."). 
Gave one of Boyfriend-Fellow's brothers a ride home from school.
 Watched Dan in Real Life.
Went out to dinner with the family.
Played Scrabble.
One of Boyfriend-Fellow's sisters came home from school

Met paternal grandparents.
Met Boyfriend-Fellow's friend at a California-themed restaurant (oh the irony).
Went to Boyfriend-Fellow's mom's house.
Played with puppy.

Went to happy hour to meet Boyfriend-Fellow's maternal grandma.

Went to bed late, couldn't sleep.
Decided to read to fall asleep and stupidly chose the Autobiography of Malcolm X.
Not a bedtime story.
Fell asleep around 2:15am

 Had to get up at 5am.
So tired I cried a little.
Piled in the car to go to Washington D.C.

First stop: cherry blossoms...

Then the Jefferson Memorial

 The White House!

Went to the Smithsonian American Art Museum
to see the Annie Leibovitz exhibit

Then we had a family birthday party at Boyfriend-Fellow's
grandma's house where I met more of the family.

(That's one devoted grandma.)

Wandered downtown with a warm coffee, picking up gifts for
various family members with nearby birthdays.

Lunch date to celebrate Boyfriend-Fellow's birthday.

Had a calzone made with pretzel bread. (Yes, you read that right.)
  Went back to Boyfriend-Fellow's mom's house.
Looked at baby photos.

Went out to tapas with the family.
Boyfriend-Fellow and I split to get drinks at the bar he used to go with his friends
(and, get this, it's the same bar his PARENT'S
used to go to when they were that age too!
Talk about history....)
Went home to play Bananagrams with his mom (and dog)

Awkward / Awesome Volume 44

Heeeyyyy GUYYYSSS.
Time for my weekly dish of wins and losses.

Awesome: I planned a surprise for when Boyfriend-Fellow got his morning coffee yesterday.
Awkward: He chose that morning to get coffee elsewhere.
Awkward x 2: I then told him what the plan had been (instead of saving it for another morning... stupid).
I printed the picture and gave them money.  The coffee girls wrote the note.

Awesome: Free lunch last week.
Awesome x 2: Free lunch again this week!

Awesome: I got a cookie as a thank you for someone and left it in their mailbox.
Awkward: I then remembered that they were going to be out of town for 3 days.
Awesome: I took back the cookie and had it on hand when a stranger was about to buy a cookie so I gave it to her.

Awkward: I always seem get itchy RIGHT after I put on nail polish and thus, can't scratch.

Awkward: 3 days of working 11-12 hours in the lab. Blech.

Awesome: Planning to make dinner at a family friend's house who just moved to the area.
Awkward: Not getting their address until it was time to head over there and finding out they live 40 minutes away. Doh. 
We were very late for dinner.

Awkward: Making more black bean sliders than I could eat last week.
Awesome: Morphing our lab into an impromptu restaurant and serving the whole hallway.

Awkward: After making a joke about pitting two people's babies against each other, having someone quietly tell me that one of the infants in question was mentally challenged.

Awesome: Having someone walk up and say, "Do you guys want some free truffle oil, parmesan fries?"
Um, yes. Duh.
